Highwayman Single Malt Batch #10
(Last bottle) The absolutely legendary man behind this incredible distillery is none other than Mr Dan Woolley. Mr Woolley is a well known character in the world of whisky and finally he has been able to create a dream many people in the industry wish they could do. Hugely recognisable with his knuckle tattoos, he brings an extreme amount of knowledge and passion and pours it into his distillery. This particular bottling is Batch #10 of the series, it was distilled in November 2016 by Dan and the team at Young Henry’s in Newtown. For four years it was in a 100L French oak heavy char Apera cask before being transferred to Byron Bay. It was then brought down to 55% using natural spring water.
The liquid was then filled into four twenty litre French oak refill wet tawny casks and finished for 3 months in the peak of the Byron Bay summer before being bottled at a cask strength of 54.3%.
Each bottle is signed and presented in a branded bottle bag. Only 130 bottles ever released, an extremely hard bottle to come across and one that must be opened and enjoyed with friends.
