Highwayman Byron Bay Single Malt Batch #9
The absolutely legendary man behind this incredible distillery is none other than Mr Dan Woolley. Mr Woolley is a well known character in the world of whisky and finally he has been able to create a dream many people in the industry wish they could do. Hugely recognisable with his knuckle tattoos, he brings an extreme amount of knowledge and passion and pours it into his distillery.
This particular bottling is Batch #9, a bourbon cask to sherry cask maturation type used in Scotland over the last few decades. Bottled at cask strength at 55.5% this particular batch only allowed for 100 bottles with only 70 available for purchase. 2 x 50-L ex-Maker’s Mark casks Aged for 3 years and 3 months and then transferred into a 100-L French oak super heavy char Apera cask for a second maturation of 5 months.
Each bottle is signed and presented in a branded bottle bag. Only 100 bottles ever released, but only 70 were able to be bought if you are not an owner of a hospitality venue. Another extremely hard bottle to come across and one that must be opened and enjoyed with friends.
